TY Masterchef's by Niall Murphy This year was also our most successful year with our Transition Year Coking Programme. The 2011/2012 programme runs through to the end of May. We set aside Friday of each week for the students to design and produce a three course meal. I and my team then mark the results and it really does amaze me how far our student’s progress in the week. The standard of the food produced is fantastic but it is also the attention to detail in regard to the presentation which is so impressive. Many thanks to the parents and schools who support this project each year and we are already taking bookings for the 2012-2013 schedules. |

Easter Kids Camp by Niall Murphy Day 1 of the Easter Kids Camp started today- a great way to keep little hands busy during the midterm break. We will try and wean them off chocolate by teaching them an exciting range of recipes from different countries and traditions, as well as practical hands on cooking. Other areas explored throughout the week include seasonality, menu planning, nutrition, team building and problem solving. Students sit down together at lunch every day to feast on the fruits of their labour. Kids summer programme run from June to the end of August which follow similar theme & format. Our Saturday Camps over the winter have been very popular and we are looking forward to these returning from September. I think that teaching the Growing Gourmet is the most enjoyable part of my class. We ran a class for father and Child here last month and we had a super little man here, all of four years of age, here with his Dad. At the start of the class I explained how they needed to have all the ingredients weighed and measured out and in separate containers before they started to cook. Well, this team gave me a master class in this and it was just fantastic to see. Of course I put it all down to an amazing teacher!! |

First Lady Top of The Class by Niall Murphy On Tuesday we had the great honour of hosting Mrs. Evelin Ilves author of Kingitud maitsed (Gifts of Taste) and wife of the President of Estonia. Mrs. Ilves was on a visit here with the President on State Business and asked to host a demonstration of traditional Estonian bread for the Estonian community here in Ireland. We had a wonderful evening with this beautiful and gracious First Lady and she presented me with a personalised signed copy of her book. In return she has returned to Estonia with my recipe for Irish Soda Bread with Dulse Seaweed. |
