Champagne Bollinger
Established in 1829, Champagne Bollinger is now considered to be one of the very best Champagne producers and one of the very few luxury brands that is still in family ownership. The property owns 165 hectares, most of which is planted with Pinot Noir, and from these predominantly 1er and Grand Cru Sites, the backbone of Bollinger's style has been set. They age their wines for twice the minimum length as set out by the AOC laws and they have an incredible range of reserve wines that they can blend in to ensure that they have continuity of style from one bottling to the next and from one vintage to the next too. The employ their own cooper, who tends their 3,500 aged barrels to ensure their health and the appropriate management of the wines; they are the only house in Champagne to still do this. As if that weren't enough, the house is the home for the wonderful stories of Lilly Bollinger, amongst whose pioneering work post World War 2 allegedly gave us the superb quote concerning the consumption of her Champagne: "I drink it when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not hungry and I drink it when I am. Otherwise, I never touch it - unless I'm thirsty."
