Albert Bichot
Founded in 1831, Bichot was originally a standalone winery and continues today as a family-run operation. Its growth over the last two centuries has overseen the purchase and running of an additional four estates in Burgundy, with Long-Depaquit being at the most northerly point in Chablis. Aging the wine for between six and eight months, they aim to get the most from their excellent Kimmeridgien soil; a remnant of the Jurassic era. The wines here are limpid but bursting with minerality, precision of flavour and a stylistic finesse that allows the flavours of fruit and almond to develop. The winery themselves recommend pairing this with oysters.
