Mix things up a little this Christmas by trying our Free-Range Duck, perfect as the star of your dinner or an added option alongside the turkey. Hand raised and grass fed, these ducks are matured for a much longer period than most. The result is a richly flavored meat, along with a wonderfully developed layer of fat between the skin that keeps the duck incredibly moist and tender.

This product is raw and requires cooking.

Preparation
1. Heat oven to 240°C fan/gas 9. Smear with butter all over the duck and season all over with salt and pepper. 2. Put in a roasting tin, and roast for 10 minutes, then reduce to 170°C fan/gas 5and cook for 40 minutes per kg or until the core temperature reaches 75°C. 3. Remove the duck from the oven and rest in a warm place for 10 minutes before carving.
