For a more old fashioned and traditional festive spread, make our Free Range Irish Goose the centrepiece of your Christmas dinner. All of our Geese are raised free range, grass fed and matured slowly for just over a five month period. This allows them to develop a thick layer of fat under the skin, which retains moisture and results in the most succulent and rich goose meat you're ever likely to taste.

Uncooked (Cooking Required)
1. Heat oven to 240°C fan/gas 9. Smear with butter all over the goose and season all over with salt and pepper. 2. Put in a roasting tin, skin-side up, and roast for 10 minutes, then reduce to 170°C fan/gas and cook for 20 minutes per kg for medium rare, 32 minutes per kg for well done or until the core temperature reaches 75°C. 3. Remove the goose from the oven and rest in a warm place for 20 minutes before carving.
