This French classic comes to life through our chefs, who follow the original method in separately cooking courgettes, aubergine and peppers before sautéing them in a rich tomato sauce. The result is a beautifully cooked vegetable stew that is perfect as a side dish to boost your daily veg. Serves up to 10 people.
Remove film prior to reheating. For best results oven cook. Oven: Heat in a preheated oven at 180°C/356°F/Gas mark 5 for 15 - 20 minutes turning the vegetables occasionally until golden. Ensure piping hot on serving.
