Roasted butternut squash & nuts with bulghar wheat, lightly spiced mushrooms, cranberries, dates and fresh thyme, all baked until golden with a sprinkling of mixed seeds on top. Serves 8 - 10 people.

Preparation
Slice up and serve with some light and fresh salads.
