Thistledown's white wines have become as highly desired as their reds, due largely to the fact that they are similarly small in production and come from very small vineyard areas in the best Australian locations. Here in Adelaide Hills, the average daily temperature is 22 degrees most years, and though this might sound balmy to us, it is very cool for Australia. What's so good about this is the effect on the grapes and their ripening process; cooler nights allow for the grapes' freshness levels to be maintained and the warm days ripen the flavours and phenolic content. Balancing these factors in the vineyard is the key to the success of these wines but in particular to the white wines. Here, the Chardonnay is carefully nurtured and then treated in Thistledown's characteristically restrained manner in the winery using fine oak and low temperatures for fermenting. This is a very special and delicious wine that has become a key reference for us in our selection and in our homes.
