Yann Chave
Yann Chave, a former fraud investigator, makes some of the most elegant and restrained wines in the Rhone valley. This Crozes Hermitages is full of plum flavour and subtle spice nuance, such as liquorice and clove. Farming entirely organically, the winery employees painstakingly handpick and destem all of the bunches of grapes before they are gently crushed and fermented. Aged almost anaerobically, there is a small amount of oxygen added right at the end before bottling to allow for the wine to be more ready for drinking once released. Though Crozes wines can be impressive and demand aging, this is a more elegant and gentle proposition that is delightful from the get go.
