A dark and bruising wine from Sicily, this is an intense fruit-driven Ripasso style made from the indigenous Nerello Mascalese variety.

From the Sambucca region in Sicily, these grapes grow at high altitude and ripen on terraced guyot traines vines. Once ripe, they are harvested and left out in the open air to partially dry before fermentation. This allows for lower water-levels in the wine and increases flavour, colour, potential alcohol and structure. It's the technique used in Amarone, and the Ripassos, hence Il Passo, but here they don't dry the grapes as much as they do in the Veneto which allows for better freshness and more versatility in matching food.
